Maple Glazed Salmon with Soba Noodle Salad
Here We go .........
The Stuff for Salmon and Soba salad Stuff and Method for Maple salmon

1/2 cup maple syrup
1 tablespoon lemon juice
2 tablespoons soy sauce
1/2 glass of white wine
3 garlic clove, minced
1/2 teaspoon ginger, minced
1 1/4 pounds salmon
2 tablespoons scallions, thinly sliced
What to do ....
Mix all ingredients except salmon and scallions. Cut salmon fillet into 4 serving pieces. Place in shallow glass or plastic dish. Drizzle marinade over fish reserving about 1/4 cup marinade. Refrigerate 30 minutes.
Preheat grill to medium-high, place fish in oiled foil or directly onto oiled grill grate. Cook until fish flakes easily with fork, about 5 minutes per side.
To serve, Place Salmon over Soba salad drizzle reserved 1/4 cup marinade over fish; top with scallions.

The Stuff and method for Soba Salad ....
1 package Organic Soba Noodles, cooked according to instructions
1 cup red bell pepper, julienne sliced
3 scallions, green and white parts, sliced thin
1 cup carrots, shredded
1/4 cup rice vinegar
2 tablespoons grapeseed oil
1 tablespoon soy sauce
2 teaspoons fresh ginger, grated
1 teaspoon Chili Garlic Sauce
What to do ....
In a large bowl, toss together noodles, peppers, scallions and carrots. In a separate bowl, prepare dressing by whisking together the remaining ingredients. Pour dressing over the noodle mixture, and toss to coat thoroughly. Serve warm or at room temperature.
I made the Soba Salad first .... very quick and easy ...
I then Grilled the salmon On the George ( Forgot to take a pic ) I love my george for grilling Fish
And Hey Presto.... a lovely Light meal ......Enjoy |
