I forgot to take pictures, so you'll have to imagine what this looks like

4-5 good sized porotbello mushrooms, stems removed
1/2 lb (200g) minced turkey (or whatever meat you like)
2 tbsp. fresh basil, chopped
bacon
1/2 c feta cheese, crumbled
sml. brie round (I substituted goat cheese)
salt
pepper

Preheat oven to 400F. Remove gills from mushrooms with a small spoon. Place cap side down in a lightly greased 9x13" pan. Top with salt and pepper. Place in oven for approx. 8 min. or until they start to soften.

In a frying pan, crumble and cook minced meat together with bacon until meat no longer pink and bacon starts to crisp. Drain excess liquid/fat. Remove from heat.

Add cheeses and chopped basil to the meat mixture then spoon into the mushroom caps. Season with salt and pepper to taste. Return to oven for approx. 5 min. to heat through.

You can vary the ingredients and amounts to suit your taste. I actually made the filling earlier in the day then just reheated it a bit before I did the mushrooms and it turned out fine.

I've never tried them myself, but I've been thinking that I should, so I'll give this a try later in the week and see how it goes. They sound simple and tasty - just about my style!
