Beer-marinated Salmon with Garlic mashed Pots ..Asparagus and Salsa

The Stuff




The recipe for Salmon

1/2 cup beer
1/4 cup lemon juice
2 Tbs minced onion
1 Tbs chopped cilantro
2 cloves garlic minced
1 tsp hot pepper sauce
4 pieces salmon ( about 1 1/2 to 2 lbs )

Combine marinade ingredients. Place salmon filets and marinade in a zip lock bag. Chill 1 hour.

Remove salmon from marinade and grill over medium heat until fish is done, about 5 mins on each side for 1/2 inch thickness.





The salsa Recipe

1 grreen pepper - Diced
2 medium tomato -- diced
1/4 cup sweet onion -- diced
2 jalapeno chile peppers -- stems removed
1/4 cup cilantro -- chopped
2 tablespoons lime juice
1 teaspoon salt -- and black pepper
Dice the tomato into about 1/4 inch cubes

add all stuff together then........

.....Add in the lime juice and the salt and pepper and stir. Set aside in a covered container in the refrigerator for a while so that the flavors will blend.

The Garlic mashed pots

approx 3 pounds of pots

6 garlic cloves Roasted and then minced

butter..... milk salt and pepper

boil pots till cooked ..drain ..add milk garlic butter and salt and mash them.....

boil Asparagus for a bout 8 mins so crunchy and drizle with Olive oil

Arrange all above on plate and enjoy

I'm right behind Sky! I love salmon and look forward to tryng this. I usually just marinate mine in a good Teriyaki sauce that I've come across but this sounds really good.

Trying to eat healthy now (hope to lose a few pounds in the process). This salmon recipe sure looks good. I will have to try this this week. Love the asparagus too.
