I know I have a couple of recipes here for jerk chicken ....but this is something I always try and perfect ..... after living in Jamaica....I think I am getting close to perfect so here we go .....and Please enjoy .....This is really easy do not let the amount of ingredients put u off as everything goes straight in to the blender ....U marinate for a few hours and then throw on Barbie .....Easy Very Happy

Remember everything goes into blender Smile

The Stuff

1 large onion chopped
bunch of scallion chopped
4 cloves garlic chopped
inch or 2 of ginger chopped
3 scotch bonnet peppers or haberneros chopped and deseeded
handful of fresh basil
handful of fresh cilantro
A few sprigs of fresh thyme
1 tsp allspice
1 tsp nutmeg
1 tsp black pepper
1 tsp kosher salt
1 tbsp oil
2 tbsp of molasses
small can of tomato puree
juice of 2 limes
I some times add plums and fresh tomatoes its up to u

2 chickens cut up or a mix of legs and breast


what to do

add all ingredients except chicken to blender and blend
clean and skin chicken and score the flesh (that way the marinade sinks in )and put in plastic bowl
pour marinade over chicken and rub into chicken (try and wear rubber gloves peppers are hot )
cover bowl and keep in fridge for at least 12 hours

cook on grill on a medium heat for at least 14 mins a side

serve with rice and salad and most of all a Rum Punch Very Happy

Oh yeah and enjoy the hell of cutting the chicken up with meat cleaver Smile

ps I think I roasted some red peppers as well to go with the rice ......

Sounds a little spicy for me but looks wonderful! I may lessen the heat a bit and give it a try Smile

EEfan its really not that hot I promice U really need the peppers in it .....If u use scotch bonnets go to 2 peppers but if u use haberneros stick with three ...Trust me its not burning hot its a nice spicy taste Smile

And face Black treacle is a better substitute ......U could use Honey But U will lose some of the taste....If you use honey use more of it and some plums Smile

You don't need a barbeque to cook this - do them in the oven for about 40 minutes at 180c and then sear it a bit on the hob if you feel the need. Sorted.
