Another Summer Salad

This one is nice because you can vary the ingredients and the amounts to what you like/need

1 seedless cucumber
1 tomato, seeded, peeled (if desired)
1 roasted red pepper
(optional-- 1 avacado)
diced cooked ham
diced mozzarella/goat/feta cheese
Extra Virgin Olive Oil
Redwine vinegar

Dice up all ingredients and place in a large bowl. Just before serving toss with some olive oil and red wine vinegar to taste.... if you're not going to eat all the salad at one meal, I would suggest taking out the number of servings needed and just dressing them with the oil/vinegar, otherwise the salad will go mushy.

Thanks so much for this! I planted my tomato plants a month and a half ago so we'll be trying this one in mid-July.
