Chicken Tagine with dates and honey served with Cous Cous

I actually first made this dish years a go when i lived in north Africa ....A Tagine is a clay pot with a dome type lid...which is where food gets it name from.....it actually makes food taste out of this world ...but you can still make in a normal pot.....cous cous which is the national dish of Morrocco used to be the hardest thing to make ..back in the day.....but these days the instant cous cous is just as good also dates can be substituted with prunes .....

try this dish u will be surprised


1 pack cous cous (instant)
9 boneless chicken breasts or thighs
2 tbls of olive oil
2 mediem onions finely sliced
4 cloves of garlic
1 teaspn of cumin seeds
1 teaspn of cilantro
i teaspn of ginger
1 teasp of tumeric
1 teaspn of cinnamon
1/2 teaspn of chilli powder
1/2 teaspn of ground nutmeg
3/4 pint chicken stock
1/2 pint water
half cup of dates or prunes halved
1/4 cup honey
1/4 cup of blanched almonds
1 tbls of fresh cilantro


Method



cut chicken into cubes bite size peices
cook untill nicely browned

then heat oil add onion .garlic and herbs and spices
cook untill onions are soft

add stock.. water and chicken and simmer for about an hour with lid on

take of lid and simmer for 10 mins or so..then add dates honey and nuts ....

serve with cous cous and fresh coriander

or thighs....I guess it just depends if you are a breast or a thigh man... ;)

LOL My Bad I shoulda explained that U can use any amount of chicken ...Just reduce the amount of the other things slightly Very Happy
