This is delish and easy to make ......


Lemon Yogurt Chicken Pita

The stuff

4 boneless chicken breast halves

2 garlic cloves crushed

1/4 teaspoon ground cinnamon

1/4 teaspoon ground allspice

1 teaspoon black pepper

1 tablespoon of fresh lemon juice

2 tablespoons Greek style yogurt

4-14 inch flat metal skewers


4 pita breads or flat breads

1 handful shredded romaine or iceburg lettuce

4 tomatoes sliced

8 radishes sliced

salt

1 recipe roasted garlic aioli (as follows )

1 head of garlic
mayo
olive oil
salt and black pepper

'slice off top of garlic... cutting trough the cloves ...
place cut side up in oven tray...Drizzle with olive oil
and sprinkle with salt and pepper ....
Preheat oven to 300f Roast garlic head untill soft
1hour.....let cool....squeeze out cloves from papery skins..mash untill
smooth...whisk into mayo ......


What To Do

Cut each breast half lengthwise into 3 strips.. combine garlic...cinnamon...allspice

pepper.. oil ..lemon juice and Yogurt..Add chicken strips and toss to coat evenly ..

Cover and keep in fridge for 30mins ..Thread 3 chicken strips onto each skewer and grill f

for 8 - 10 mins turning every couple of mins

Heat pitas in oven or on grill for a minute or so ...put lettuce toms and radishes on top

of pita cut each chicken piece into 2 and put on top ..top with Aioli salt and pepper and

Enjoy......

I actually made this on a small electric grill in the kitchen ....therefore not needing the skewers Smile

It was the idea of skewers that made me go 'that's that scuppered then!', so it's good to know it can be done on a grill type thing. Problem is, the closest I have to that is a sandwich toaster - do you think that would work?

Absolutely face..... granted it might not have quite the same "smoky" flavour that an outdoor grill would, but I think it be worth a go.

As usual Aja this looks delish and I will give it a go sometime, although, I'll be leaving out the radishes.

Face U can do it under the grill (toaster) or a raised ridge frying pan thingy i used my fajita grill...... do U mean a little george foreman type sandwich maker ??? if so thats fine .....

this is like the grill pan i mean ..without the press U can get them quite cheap ....
