Spanikopita Burgers with Greek salad and chips and sauces and Ouzo


The stuff



stuff for the Burger makes 4/5

1 1/2 pounds of ground chicken
1 small red onion chopped
3 garlic cloves crushed
1 tablespoon of butter
10 ox box of frozen Spinach thawed
6oz of crumbled feta cheese
1 tablespoon of olive oil
1 heaped teaspoon of oregano
i tablesppon of grill seasoning ie ...montreal seasoning by morcormick
and 4 nice white crusty rolls

Directions
Heat a large nonstick skillet over medium-low heat. Add the olive oil(1 turn of the pan) and the butter. When the butter melts, add the chopped red onion and crushed garlic and cook for 5 minutes. Transfer the onion and garlic to a large bowl to cool.

Wring the thawed spinach dry by twisting it in a clean kitchen towel over your sink. Break up the block of spinach as you add it to the cooled onion and garlic. Season with 1 teaspoon of the oregano (one-third palmful). Add the ground chicken and feta, then the grill seasoning and a healthy drizzle of EVOO. Mix it all together, then divide the mixture with the side of your hand into 4 equal sections.
Form 4 patties, each 1 inch thick. And Then put in freezer til crisp much easier to cook Smile



Meanwhile Take about 6 large potatos and peel and cut in to chips .... I dont have a deep fat fryer so just some veg oil in a sauce pan ...get to a nice heat and when u have started the burgers cooking add the chips to oil till a nice golden brown.... Oh yeah Smile
cook the patties over medium-high heat for 5 minutes on each side.



Stuff for the sauces

Yogurt sauce .....

1 cup greek yogert
1/4 of a seedless cucumber diced
2 crushed garlic cloves
juice of half a lemon
teaspoon of oregeno

Place the chopped cucumber in a food processor with the crushed garlic, , the remaining oregano and the remaining lemon juice. Add a little salt and process until smooth. mix in to the yogert ..put in small dish .....and put to one side

The Olive sauce

2 roasted red peppers
10 to 12 pitted Calamata olives (a generous handful)
1/4 cup of flat leaf parsley

Place the roasted red peppers, parsley and olives in the food processor, season with salt and pepper and process to a paste. Remove to small dish



The Greek Salad

romaine lettuce
arugula
sliced red onion
Cucumber
Toms chopped
olive oil
lemon juice

Combine the sliced cucumber and tomato with the sliced red onion, romaine , arugula . Dress with half of the lemon juice and olive oil to taste and season with salt and pepper;


Slather the roll bottoms with the yogurt sauce. Place the cooked burgers on the sauce and top with the salad. Slather the roll tops with the red pepper-olive paste and serve with chips of your choice. and the Ouzo...... Smile

Bloody delish I must say .....

I nornally use 2 pounds of chicken and i can make a bout 8 decent sized burgers ..I did a huge batch this weekend and have lots in freezer ..... also sometimes i just make the Olive sauce and omit the yougurt......

I also made Mince/groundbeef ones withh chopped onions and garlic (not cooked )montreal steak seasoning and crumbled blue cheese ....salt and pepper and froze them too .....Ps mix all together and make into patties Smile

great for when i dont feel like cooking ..just grab from freezer ..and have with salad .....

I'm always so bloody hungry after reading your posts! Laughing

Those look wonderful Aja! I love spanokopita so I will give those a go for sure.... I think they'll be good on the BBQ this summer. And I think I'll freeze some as you have.... nothing like having them ready to go!

I made these burgers tonight (though without the spinach and with minced turkey rather than chicken) and they were brilliant...
