This is a must to try this summer ........
The Stuff
4 Boneless skinless chicken breasts
1 fresh red chile , seeded and finely chopped
2 garlic cloves crushed
1 tbsp of grated fresh ginger
1/2 cup honey
2 tbsp of soy sauce
1/2 cup fresh lime juice
For Garnish......
1 scallion sliced
i red chile seeded and and finely sliced
1 tbsp of fresh mint leaves
1 tbsp of cilantro leaves
What to do ..........
You will need at least 4 metal skewers
Cut each breast half lengthwise into 3 strips
combine chile..garlic..ginger...honey ...lime and soy sauce (I use blender)
reserve 1/4 cup of mixture..
add chicken to remaining mixture and toss to coat evenly..
cover and put in fridge for at least 30 mins
Thread 3 chicken strips lengthwise on each skewer
grill over medium hot coals turning every 2 mins until cooked through
I also baste them as i am turning and like to drizzle more Honey over them
as they are cooking .......to get that crunchy affect with the suger ......
of course You dont have to do that .......
I just like mine like that ......
ps they are not burnt its just the honey on top
Drizzle reserved mixture over top ..when finished with grilling
sprinke with scallion ...chile...mint and cillantro
serve on a pita bread with salad ..
or with Rice and green salad
or simply wrap in a lettuce leaf ......
