2 Cornish Hens
4 tbsp. butter
1 tbsp. dried sage
2 tsp. lemon zest
1 tsp. salt
Soften & emulsify above ingredients. Rinse hens, then with your fingers seperate skin from breast, then take approx. 1 tbsp. of butter mixture and insert between skin and breast, once completed smooth down on top of skin, salt & pepper each hen.
Next turn oven to 400 F
Heat a pan large enough to hold both hens, once hot enough add the remaining butter mixture, once melted add both hens breast side up, cook approx. 3 mins. to brown the underside.
Transfer to a broiling pan, baste every 15 mins. cook approx. 45 min. let rest and enjoy! |

I love cornish hens. This is similar to recipe I use. I also will put a whole lemon or small orange inside and stab it through the hen with a fork and let it bake. Makes it taste lovely. |
