3 cups shredded peeled potatoes
2 eggs, lightly beaten
1/4 cup grated onion
1/4 cup all-purpose flour
3 tablespoons minced fresh parsley
1 teaspoon salt
1 teaspoon pepper

DIRECTIONS
Rinse potatoes in cold water; drain thoroughly. In a bowl, mix potatoes, eggs, onion, flour, parsley, salt and pepper. Pour batter by 1/3 cupfuls onto a greased hot griddle. Fry 5-6 minutes on each side or until potatoes are tender and pancakes are golden brown.

These of course can be enjoyed year round! I love to have mine with a spicy mustard or ketchup, depending on my mood.

Yum!

I have my potatoes and onions ready.

Round here they eat them with apple sauce or sour cream.

Mmmmmm...sour cream is good too! I don't like apple sauce though

is shredded potato the same as grated? I'll give it a go anyway, they sound pretty tasty

Yup - Shredded = Grated.

Traditionally they are fried in oil in a frying pan - the griddle may be healthier, but that's not really the point.

I leave out the parsley too. Don't want to spoil a high cholesterol product with too much greenery.

Thanks for the recipe.... I've been looking for a good one so will give this a try for sure.

Tasty goodness...I'm a sour cream gal myself. That is how I was raised to eat them.
