i've been thinking of making my own onion bhaji's, hoping i could find a version i could shallow fry instead of deep fry ( i don't have a deep fat fryer and don't really want to be putting loads of oil into pans for a few bhaji's ) and i came across this version that you can just do in the oven! as well as the bonus of not having to mess around with loads of oil, these will be healthier than the deep fried versions
these are made with chickpea/gram flour, but theres also a version with buckwheat flour
i've not tried them yet, but next time i do a curry i'll try them out

i made these tonight after finally tracking down the right flour and they were great - easy to make and really tasty. i finished mine under the grill to crisp them up but apart from that it was identical to the instructions.
i'll definitely be making them again |
