The Stuff
4 pounds potatoes, cooked until just tender, cubed, cooled
5 or 6 hard cooked eggs, cooled, coarsely chopped
6 slices of bacon crumbled (use streaky bacon in the Uk and cook well)
1/4 to 1/2 cup chopped red or yellow onion
1/4 to 1/2 cup chopped celery, option
1/4 to 1/2 cup of chopped scallions
Dressing
1 cup mayonnaise (a little more or less, as desired)
salt.. black pepper.. Paprika.. Garlic salt ...Celery Salt
What to do
Combine potatoes... egg... onions... scallions and celery... Stir in mayonnaise, and salt black pepper garlic salt, paprika and celery salt to taste... (Stir the mayonnaise in a little at a time, until you have the flavor and consistency you like.)
Serves 6 to 8.
Delish I always have some made up in the summer months ..It goes with everything

I was thinking that bacon thing seemed like an interesting addition....lol! I've never had potato salad with bacon in it, but that actually sounds interesting! :-) |

Potato salad is one of my favorites. While I must say my mother's recipe has always been the best I have ever eaten, I will have to give this a try. After all not only is it potato salad but it's Aja recommended! |
