I had lots of veggies to use up fast .....so this was a good way to go .....
Balsamic Peppered Pork chops with Tomato and Onion Cous Cous and Grilled Veggies
The stuff
4 Pork chops cut 1inch thick
4 garlic cloves
2 tbsp of whole black peppercorns
1 tbsp of dried thyme
1/2 tsp of crushed red pepper flakes
1 tbsp of balsamic vinegar
3 tbsp of olive oil
extra balsamic vinegar for basting
What to do
Place all ingredients in a food processor or blender ....pulse to a coarse paste
Rub the paste over both sides of the pork chops and cover and let sit in the fridge for at least an hour .....
Grill over medium hot coals basting with the balsamic vinegar for about 8 /10 mins
or in a grill pan over high heat basting with the Balsamic vinegar for 8 /10 mins
Serve with The cous cous (i left out the spinach)
