A new twist on a classic Greek favourite; you can easily make a larger quantities without ruining the recipe at all.
8 oz spinach
6-8oz crumbled feta cheese (I use light feta)
1 tsp. dill
large salmon fillet (approx. 12 oz)
Phyllo pastry, approx. 6 sheets
Sml amt. Melted Butter/margarine (or you can use low-fat cooking spray)
In frying pan, cook spinach until just wilted. Remove from pan and finely chop. In a large bowl, mix together with feta cheese and dill then set aside.
Cut salmon in half length wise then spread with spinach mixture. Cut fillet into six pieces. Place a piece of salmon in the middle of a sheet of phyllo pastry and fold into a "packet". Brush lightly with melted butter/. Place in a 400F oven x 12-16 min or until phyllo is lightly browned. (If you have a thick piece of salmon you may need to cook for a few minutes longer). |

I like the sound of this one eefan. I will so have to give it a try. You're messing with my month menu plan woman!
I really do want to start eating more fish. But I've cooked so little of it in the past so it's all very new to me. This sounds easy and right up my ally. |

Ohh...that sounds pretty good...shame the missus doesn't like spinach, or salmon |
