My husband is a picky eater. So making dinner isn't always easy. Unless I make the things I know he likes. However, I like variety. Last night I decided I wanted something different so I had a pick through the fridge and made up a meal I haven't named yet. All I know is my husband ate it up and liked it, so it was mission accomplished on that front! thumbs
Here it is. It's not exact because I was doing it on the fly and of course you can always change it up.

Ingredients
Four slice streaky bacon
prosciutto (about four or five slices)
1 parsnip (sliced thin. I used a carrot peeler to get the strips)
fettuccine
olive oil
butter (about two pats)
grated parmesan

Cook the fettuccine according to the directions. While it is cooking take streak bacon and fry it up in a pan until nice and crisp. Set to the side on some paper towel to get off excess grease. Take prosciutto and fry it in the left over bacon fat. It will get crisp fast so be careful. Set it to the side with the bacon. In another frying pan put in about 2 tablespoons of olive oil. Heat it up and drop in the strips of parsnip and start to cook them up slowly. Add two pats of butter. Take pasta from water and put in with parsnips. Mix around good. Take bacon and prosciutto and cut up. Not tiny but into bite size pieces. Add to pasta and parsnips. Mix it all around good. Take a few big pinches of Parmesan and sprinkle it on everything. Stir until it's melted. Serve it up, put a bit more Parmesan on top.

It was very tasty and all the flavors blended together great. It also was done very quickly. I plan on working on this some more as time goes by. I thought pancetta might be nice in it as well.
I was also thinking of naming it P-cubed for "Pasta, prosciutto and parsnips" Laughing

that does sound tasty for sure - even though I hate parsnips!

But if you use pancetta, it'll have to be P to the 4th.

Sounds nice sky ..... I would add some Fresh Garlic too..... as for a name .....

I thought fresh garlic would be a good addition as well. And I love the name! Laughing

I've never eaten parsnips but I"m going to try the recipe for sure Sky. thanks.
