Ajas Grape Tomato,Spinach and onion cous cous with Grilled steak
The stuff
1 or 2 cups of cous cous (i use 2)
cooked according to instructions on Pkt
put to one side to fluff up
1 box of grape toms
1 pkt of fresh baby spinach
1 large onion diced medium
balsamic vinegar
kosher salt
olive oil
chopped parsley
steak .....I used 1 London Broil...can also use chicken
salt and pepper to season
put tomatos with a large spash of olive oil and Balsamic vinegar and salt in oven for about 20 mins or untill they start getting wrinkles
meanwhile fry onions with some olive oil untill soft...... add the spinach stirring for about 1 min.... and add cooked toms .....
mean while turn the grill on ........
cook steak the way u like .....just use kosher salt and fresh ground pepper ......
meanwhile mix the tom and spinach and onion mix in with the cous cous
and then plate up........
I always slice the steak...it goes further and U can use chicken for this too

Aja, please please come to my house... it was a BIG mistake to open this thread now, as I am starving now...have nothing to eat...1st i need cook some food...and it's raining outside |

Well, I finally made the couscous salad with the spinach and grape tomatoes. My husband and I both liked it a lot and we agreed we'll be making it again soon!
I had a half of a bunch of baby asparagus in the fridge that was getting old so I cut the tips off and threw them in the frying pan when I added the spinach at the end. They were a perfect addition. Thanks Aja. You so rock. |

lol funny enuff thats what i made tonite ...... with the addition of roast pork ......seasoned in garlic and black pepper and paprika ..... bloody delish ..... and yes Antionia .....thats what I would do ..... add stuff to your taste.......... |
