Some of the girls at work, and I have just started subscribing to the Food Network Magazine and have enjoyed trying out some of the recipes....... this is one of our favourites, just made it last night for supper and it was delish
Food Network - Broccoli Cheddar Soup
Some changes I made: - used 5% cream instead of half and half (I think evaporated milk or homo. milk would also work well)
- doubled the recipe (great reheated!)
- next time I would reduce/omit the added salt by at least one half
- add/double broccoli.... the soup is much thinner than I anticipated and could easily handle the extra veg
- reduce the added water by at least half (soup is too thin... easier to add extra water after blending,
if needed (depending on your taste) |
